PK’s Quick and Easy Beef Quesadillas

1 pound ground beef

1 pkg Mexican Cheese

1 pkg taco seasoning (optional)

1 jar salsa

1 container sour cream

1 tomato, chopped into small pieces

1 onion, chopped

1 green pepper, chopped (optional)

Flour tortillas

In skillet brown ground beef until done, drain fat. Mix in taco seasoning. Take a flour tortilla and on half of it, spread about 1 tablespoon each of salsa and sour cream. Then spread about 3 – 5 tablespoons of ground beef mixture on top of salsa and sour cream. Top with cheese and other toppings. Fold in half.

Using a George Foreman grill, preheated and brushed with olive oil, lay quesadilla with the folded side towards you on grill and close. Heat for 3-4 minutes, do not turn. With large flat spatula, remove and serve on plate. Garnish with additional toppings if desired.

If you don’t have a George Foreman grill, you can use a skillet but you will have to flip the quesadilla.

One quesadilla, folded, per person unless you have someone with a huge appetite! To complete this meal, serve with additional salsa and tortilla chips.
