Texas Beef Skillet

1 pound ground beef

3/4 cup chopped onion

1 – 16-ounce can tomatoes, cut up

1 – 15 1/2-ounce can red kidney beans

1/2 cup quick-cooking rice

1/2 cup water

3 tablespoons chopped green pepper

1 1/2 teaspoons chili powder

1/2 teaspoon salt

1/2 teaspoon garlic salt

3/4 cup shredded American cheese

Corn chips, crushed

In skillet cook ground beef and onion till meat is browned and onion is tender. Drain off fat. Stir in undrained tomatoes, undrained beans, rice, water, green pepper, chili powder, salt, and garlic salt. Bring to boiling; reduce heat. Cover and simmer for 20 minutes, stirring occasionally. Top meat mixture with shredded cheese. Cover and heat about 3 minutes or till cheese melts. Sprinkle corn chips around edge. Makes 6 servings.
