Savory Sausage Casserole

6 ounces wide noodles (3cups)

1 pound bulk pork sausage or bulk Italian sausage

1/2 cup chopped green pepper

1/2 cup chopped celery

1/2 cup chopped carrot

1 – 10 3/4 ounce can condensed cream of celery soup

1/3 milk

1/4 cup mayonnaise or salad dressing

1/2 teaspoon dried oregano, crushed

1 cup shredded mozzarella or provolone cheese (4 ounces)

1/3 cup fine dry bread crumbs

2 tablespoons butter or margarine, melted

Snipped parsley (optional)

In large saucepan cook noodles in a large amount of boiling salted water about 12 minutes or just till tender; drain. Meanwhile, in large skillet cook sausage, green pepper, celery, and carrot till meat is browned and vegetables are tender. Drain off fat. In mixing bowl combine cream of celery soup, milk, mayonnaise or salad dressing and oregano. Stir in sausage mixture and mozzarella or provolone cheese. Gently fold in drained noodles.

Turn into a 2-quart casserole. Toss together bread crumbs and melted butter or margarine; sprinkle atop casserole. Bake, uncovered, in 350 degree oven for 45 to 50 minutes or till heated through. Garnish with parsley. Makes 4 to 6 servings.
