Taco Salad

1 head lettuce, cut up 1 can chili hot beans, drained 12 oz. Colby cheese, grated 2 to 3 tomatoes, sliced 1 pkg. taco chips, crushed 1/2 C. taco sauce Put first 4 ingredients in a bowl. Just before serving add chips. For dressing add enough Russian dressing with taco sauce.

Pineapple Salad

1 large can pineapple 2 oranges 24 marshmallows 1 C. nuts 1 C. whipped cream 2 egg yolks 1 T. sugar 2 T. flour 1/8 tsp. salt Take juice from pineapple and add 1 cup water, flour, sugar, salt and egg yolks. Bring to a boil, when cold add the rest of the ingredients.

Ham Salad

2 C. cooked ham, ground up 1 C. celery, diced 1/2 C. green pepper, diced 1 small onion, diced 2 C. cooked eggs, diced 1/4 C. pickle relish 2 T. mustard 3/4 C. mayonnaise Mix all ingredients and serve on fresh buns or bread.

Fruit Salad

1 can Eagle Brand milk 1 – 8 oz. pkg. cream cheese 1 bowl Cool Whip 1 can fruit cocktail Green and purple seedless grapes oranges apples pineapple Cream the cheese. Add milk and blend well. Beat in cool whip until blended. Add whatever fruit you like, drain if needed.

Cranberry Salad

1 lb. cranberries 3 C. apples 1 C. nuts 1 can crushed pineapple 2 1/2 C. sugar 2 – 3 oz pkg. raspberry jello 1 C. boiling water Grind first 3 ingredients until coarse. Add pineapple and sugar. Dissolve jello in water, then pour over other ingredients. Chill.
